No, it's not the the new pet name for my boyfriend...it's what I made for dinner tonight!!!
Tonight, my friend Anneka came over and we made these super yummy sweet potato and black bean cakes for dinner. I was really surprised at how well they came out. I found the recipe on this blog and we all know how much I love trying out new vegetarian wares. I didn't have scallions or jalapeƱos, so I just threw in some onions and called it a day.
The only issue I ran into came when we were trying to decide what to serve it with. I threw some fresh spinach on the plate and warmed up some leftover stuffed mushrooms from a recent wedding.
It seems like my guests enjoyed themselves. This recipe is only 165 calories for two cakes, which works since I am having to count calories these days. This recipe is adapted from a Martha Stewart recipe. I love Martha these days; she has much more street cred since getting out of the slammer. However, I don't like how she constantly interrupts guests on her show (oops...I guess I just ruined my chances to be one of those guests).

Salsa/Guacamole and tortilla chips.
Sweet potatoes have been our new side dish of choice for bbqs. We have been dicing them and then baking/browning them so they are like the country potatoes you get at a breakfast shop. We have cooked them on the grill too and are yummy, but hard to not burn. I just season with salt and pepper and brush with oil so they aren't too dry.
dude, what about some asparagus? or i was thinking about a tomato based salad. like not a green salad but maybe tomato and zucchini and squash with like a balsamic vinegar? oh and mushrooms. yum. i am def trying this recipe.

probably with wheat garlic bread and sugar snap peas seasoned with sea salt. Yum!
